Marinated Simple Truth™ Chicken 7 Ways

Ingredients:
  • 7 pounds Simple Truth™ chicken boneless skinless breasts, tenders and/or thighs, cut into serving pieces as desired
  • ½ cup each, 7 marinades of your choice
  • 7 quart-sized Ziploc freezer bags
Marinades:

Cilantro Lime:

  • ¼ cup cilantro, chopped
  • Zest and juice of ½ lime
  • 1 Tbsp. jalapeno, minced
  • ½ tsp. salt
  • 3 Tbsp. olive oil

Balsamic Rosemary:

  • ¼ cup balsamic vinaigrette
  • 1 Tbsp. fresh rosemary, chopped
  • 1 clove garlic, minced

Red Coconut Curry:

  • 2 Tbsp. red curry paste
  • 4 Tbsp. coconut milk
  • ½ tsp. salt
  • 1 green onion, minced

Chipotle Orange:

  • 1 Tbsp. adobo sauce
  • 1 Tbsp. maple syrup
  • 2 Tbsp. olive oil
  • Zest and juice of ½ orange

Sesame Ginger:

  • 1 green onion, minced
  • 1 tsp. ginger root, grated
  • 1 Tbsp. tamari
  • 1 Tbsp. toasted sesame oil
  • 1 Tbsp. honey
  • 1 tsp. black sesame seeds

Tandoori:

  • 1 tsp. curry powder
  • 1 green onion, minced
  • 1 Tbsp. jalapeno, minced
  • 4 Tbsp. plain yogurt

Peanut Sauce:

  • 2 Tbsp. Earth Balance Peanut and Coconut Oil Blend
  • 2 Tbsp. coconut milk
  • 1½ tsp. Sriracha
  • 1 Tbsp. maple syrup
  • 1 Tbsp. tamari
  • 1 tsp. grated ginger root
Directions:
  1. Divide the chicken into seven quart-size freezer bags, placing one pound of meat in each bag.
  2. Mix individual marinade recipes and pour each over the bags of chicken. Seal bags well.
  3. Label bags with name of marinade and date that it is made. Store in the refrigerator if you are eating the following day, or store in the freezer.
  4. To prepare, thaw the marinated chicken in the refrigerator the night before you are planning to serve it. To cook, either grill, sauté or bake the chicken until it is cooked through, about 15-20 minutes. Refrigerate leftovers.
