Lemon Mint Peas

Garden peas are a classic spring vegetable. Lemon and a hint of mint add to the fresh spring flavor.

Hands-on Time: 10 min. | Total Time: 10 min. | Serves: 8 | Difficulty: Easy

  • 2 packages (12 oz. each) frozen peas
  • 2 Tbsp. butter
  • 1 Tbsp. lemon juice
  • 2 tsp. grated lemon peel
  • 1/8 tsp. salt
  • 2 Tbsp. fresh mint, chopped
  1. Cook peas as directed on packages. Meanwhile, in medium saucepan, melt butter over low heat. Stir in lemon juice, lemon peel and salt.
  2. Just before serving, stir in mint and toss butter sauce with cooked peas.
  3. Refrigerate leftovers.
